Story of our Craft
Heritage and History
The cacao grown on the family-run Anamalai Estate in Pollachi, Coimbatore, has a history of generations of care and a deep respect for the land- elevating the standards of how cacao is cultivated, harvested, and fermented.
When the beans arrive at Compass Chocolates, we continue that principle of intentionality. We gently roast before stone milling the beans in an Indian-made melanger with powdered coconut milk, jaggery sugar, and fragrant cardamom. Each ingredient is thoughtfully chosen to honour the place from which this cacao comes, allowing its unique character to shine.
This is more than chocolate—it’s a true taste of place, carrying the flavours, traditions, and spirit of southern India in every bite.
The Anamalai plantation borders a wildlife reserve and has seen visits from tigers and elephants! Chef Priya had the privilege of visiting this plantation. Bordering the estate, the Anamalai Tiger Reserve is a lush sanctuary of ancient forests and remarkable wildlife, including the elusive Bengal tiger.

A different kind of tree syrup
To make Jaggery farmers tap the sap from date palm trees during the cooler months. The fresh sap is gently simmered until it thickens and naturally caramelizes before being poured into molds. In this case the sugar was pressed into a block then ground into a powder.
Flavour Profile
Creamy coconut and rich Indian cacao create a beautifully smooth chocolate with layers of warm caramel and toffee from traditional date palm jaggery. Unlike refined sugar, jaggery brings its own delicate character, adding notes of honey, dried fruit, and gentle warmth that complement the cacao rather than masking it. A touch of fragrant cardamom lingers on the finish, bringing the flavours together in a chocolate that is unmistakably inspired by the tastes of India.
