The Story of our Craft

Tart Cherry

This bar is made by steeping roasted cacao nibs from the Dominican Republic in local tart cherry liqueur from St. Albert. After infusion, the nibs are dried and ground to create a chocolate that beautifully captures the essence of the spirit without overshadowing the cacao itself. The result is a deeply aromatic chocolate that balances rich cocoa flavors with a bright cherry tang and a gentle warmth that stays on the palate. The sweetness mainly comes from the cherries, making this a wonderfully fruity and lingering dark chocolate.

Tucked within the lush hills of the Dominican Republic, Reserva Zorzal is more than a cacao farm — it’s a living sanctuary where conservation and craft exist side by side. Seventy percent of the private reserve was created to protect one remarkable migratory songbird, the Bicknell’s Thrush. The remaining land is thoughtfully cultivated using sustainable agricultural practices, growing premium crops like cacao and macadamia.
