After being stone ground for 48 hours, the taste, which begins with blackberry, tamarind and golden raisin, finishes with a slight toasted sugar and cocoa finish. At 73% this dark chocolate is full of character.

The Story of Our Craft

When chocolate is this exceptional, less is more. Rather than masking the delicious but subtle character of Belizean cacao with additional flavours, we sweeten it with natural cane sugar. Before it ever meets the cacao, the sugar is carefully toasted to develop subtle caramel notes while preserving its clean sweetness. It is then stone ground with the cacao for 48 hours, allowing the flavours to meld into a remarkably smooth chocolate that lets the true character of the cacao shine.
