Anamalai Farm near Pollachi intercropps cacao with jackfruit, coconut, and nutmeg, fostering vibrant biodiversity. Their organic methods elevate cultivation- shaping our 58.5% chocolate, which is crafted with coconut, subtle cardamom, and jaggery for warm, brown-sugar depth.
The plantation borders a wildlife reserve and has seen visits from tigers and elephants! The beans are grown on a single estate family-run farm where they are elevating the standards by which cacao is grown, harvested, and fermented with their organic operation.

Chef Priya had the privilege of visiting the cacao plantation where these beans are sourced during a family trip to India this past January. While exploring Kerala — often called the “Venice of India” — she experienced the region’s stunning backwaters along the Arabian Sea, where daily life unfolds by boat. Kerala is also known as India’s most educated state, with an impressive 96.2% literacy rate.
