In this unique process, fresh passionfruit is introduced during the second stage of cacao bean fermentation infusing the beans with the tangy vibrance of passionfruit thereby transforming the chocolate. The resulting bright, tropical acidity combined seamlessly with the deep cacao richness leave notes of citrus, floral with a long harmonious finish. This is more than chocolate.
